The gourmand fragrance category of sweet and edible notes came out of a longer tradition of amber (labdanum, benzoin, vanilla) and spice (formerly “Oriental) scents with clear culinary applications. Think cinnamon, clove, nutmeg, saffron, etc.

Thierry Mugler’s Angel (1992) by perfumers Olivier Cresp and Yves de Chiris is credited with launching the modern gourmand trend. It opens with an edible blast of mint, lavender, and citrus that moves through a rich coffee heart before dropping into a long sweet drydown of tonka, vanilla, caramel, chocolate, and musk. Many of the deep, sweet notes had already been employed for many decades. The shift was in the introduction of newer notes (coffee, chocolate, caramel) that were explicitly edible.
